RECIPE - MV's Mango Salsa


Our neighbor brought us a bowl of salsa last night, and it was AWESOME. My wife called and got the recipe this morning, and I am sharing it with you.

We had it with chips, but she suggested serving it over grilled fish of chicken.

INGREDIENTS
2 - Mango's peeled & diced
2/3 cup of diced red pepper
2 - Tablespoons fresh cilantro diced
1/3 cup of minced red onion
1 - avocado peeled and diced
2 - Tablespoons of white vinegar
1 - Tablespoon of sugar
1/2 teaspoon of salt (I prefer coarse sea salt)
1 - teaspoon pepper ( I prefer restaurant grind pepper)
1 - Tablespoon of Olive Oil

PROCESS
Combine all ingredients in a large bowl and fold gently - then Chill

I liked the way the flavors all contrasted and complimented each other
The sweet of the mango with the tart of vinegar and the tangy red onion, then the salty of the chip. It was a roller coaster of flavor!

* I am considering adding a little spicy banana pepper to mine when I make it

RECIPE - Nacho Cheese Dip

This is my version of the Nacho Cheese Dip my mom made when I was a kid.
It is a staple at our families Super Bowl Party and a regular during NFL Sundays and other gatherings through out the year.

INGREDIENTS
1 - 16 oz block of Velveeta Cheese
1 - 14.5 oz can of Hunts Fire Roasted Tomatoes with Garlic
1 - 14.5 oz can of Hunts Stewed Tomatoes
2 - 4 oz cans of La Preferida Diced Green Chilies
1 - Cup of Whole Milk
1/4 cup of finely diced yellow onion

PROCESS
Melt in the microwave, 2 minutes at a time and stir, repeat until completely melted. - ad milk if needed.
If your serving at a party use a crock pot to keep warm - stir and add milk as needed

RECIPE - BLT Plus

I had BLT's on the menu tonight and went a little overboard and came up with the BLT Plus

INGREDIENTS
3 - Slices of Rotella's Steakhouse bread
8 - Pieces of thick slice bacon ( I used the bacon from the Fareway meat counter)
2 - green onion - cut the green ends off and split in to 4 pieces
2 - slice of coby jack cheese
2 - leaf of lettuce
4 - slice of Tomato
Pepper
Hellmann's® Real Mayonnaise or sandwich spread - Which ever you like - I used Hellmann's® Real Mayonnaise

PROCESS

place bacon on a cookie sheet - lie out flat and straight
sprinkle with pepper and cook in oven at 350 degrees for about 15-20 mintues depending on how crisp you like your bacon

Toast bread

Assemble in this order
Toast
cheese
bacon
green onion
toast
Hellmann's® Real Mayonnaise
cheese
bacon
lettuce
tomato
Hellmann's® Real Mayonnaise
Toast

RECIPE - Captain Crunch Chicken

This is my version of an old Planet Hollywood dish. I made these tonight for supper and the kids loved them.

INGREDIENTS
4 - Chicken breast
3-1/2 - cups of flour
4 - teaspoons of coarse salt
4 - teaspoons of black pepper
2 - teaspoons of white pepper
4 - teaspoons of garlic powder
1/2 - box of Captain Crunch
4 - eggs
1 - cup of milk
Peanut Oil

PROCESS
Cut chicken in to strips

Bowl 1
combine 3 cups of flour, 2 teaspoons of black pepper, 2 teaspoons of salt, 1 teaspoon of white pepper and 2 teaspoons of garlic powder.

Bowl 2
Whisk 4 eggs, 1 cup of milk, 1/2 cup of flour, 2 teaspoons of black pepper, 2 teaspoons of salt, 1 teaspoons of white pepper, and 2 teaspoons of garlic powder

Bowl 3
Finely Crush a 1/2 of box of Captain Crunch cereal

First toss the chicken in flour in bowl 1 and shake of the excess
Then dunk the chicken in the batter in bowl 2
Then coat in the cereal in bowl 3

fry in peanut oil at 375 degrees until golden brown

RECIPE - Homemade Chicken Stock

Homemade Chicken Stock

Cans of broth and bases are fine, but nothing beats homemade chicken stock

I usually make chicken stock after I roast a whole chicken. After I carve the meat off the chicken for our dinner (we generally still have plenty of dark meat on the bone) I taked everything that is left and use that for my stock. If I dont have a whole chicken carcas, I use 4 chicken thighs.

Ingredients
1 - left over whole chicken or 4 chicken thighs
(if I use the fresh thighs I will brown them in a skillet first)
1 - yellow onion cut into large chunks
2 - carrots cut into large chunks
3 - celery stalks cut into large chunks
2-3 cloves of garlic
1/4 cup of dried parsley
1 - bay leaf
1 - tablespoon of coarse ground pepper
1 - teaspoon of sea salt
1-1/2 gallon of water

Process
combine all ingredients and bring to a rolling boil
then reduce heat and simmer for 2-4 hours
When it taste right - take it off the heat and strain.
Use or freeze in a freezer safe container.

Recipe - Sausage Bread

Sausage Bread
This has been a popular recipe amongest my friends and family
Great for bringing to holidays gatherings or for breakfast or just a snack

INGREDIENTS
1 - 16 oz Tube of Jimmy Dean's Sausage
1 - Loaf of Rhodes white bread frozen dough
1 - 16 oz container of Kraft 100% grated parmesan cheese
2 - eggs
Paprika

PROCESS
Thaw - dough loaf
Rise - dough loaf for 2 hours

cook sausage (note save the grease)
mix the sasauge, 2 eggs and container of parmesan cheese together in a bowl

Roll out dough loaf
Spread mixure on to rolled out dough loaf
Roll up dough & mixure and tuck under the ends to form a loaf

Preheat oven to 350

Melt a stick of butter with a 1/4 cup of sasauge grease
Brush loaf with butter and sprinke with paprika
Put in preheated oven for 50 minutes
Brush about every 15 minutes

Slice about 1/2" thick and Eat

If you are having this for breakfast - it goes great with an over easy egg.
I usually make it for holiday gatherings - its better warmed up, but can be served cold or room tempt.
